Microwaved Banana Cake

Do you feel left out that you don’t have an oven to bake cakes?

Don’t worry, now you can still ‘bake’ a cake using the microwave. I have always wanted to try microwaved cake and see what the hype is all about.

I took the opportunity when it was my grandpa’s birthday.

1 tablespoon of butter
1 egg
1 tablespoon of milk
1 banana
3 tablespoon of self raising flour
3 tbsp brown sugar

Step 1: Melt the butter.

Step 2: Beat the egg and add in milk.

Step 3: Add in mashed banana to the egg and milk mixture.

Step 4: Add in brown sugar and self raising flour.

Step 5: Pour the mixture in a bowl/cup. For me I pour it in a small bowl and cook in the microwave for 1 minute to 1 minute 15 seconds on medium heat.

This is what it looks like after it has been microwaved.

Verdict: I love it. It taste like steam cake. If you love banana, this recipe is for you! You can serve the cake with an ice cream of your choice.

Coffee Cake

Mother’s Day was on Sunday.

Of course, I took the chance to bake for my Mum.

This recipe is really easy and most of the ingredients you can find it at home.

You will need:

170g of butter (melted)

170 of caster sugar (I think you can cut down on the sugar)

170g of self raising flour

1 tsp of baking powder

3 eggs

4 tsp of instant coffee (dissolved it in a few tbs of hot water)

1) As said above, melt the butter.

2) Beat the butter and sugar until it is well mixed.

3) Add in baking powder.

4) Add in eggs and flour. Bit by bit.

Add in one egg then the flour.

Repeat it three times.

5) Add in the instant coffee. Ensure that the coffe is not hot.

Give the coffee time to cool down.

6) Remember that you need to preheat your over while mixing the ingredients. Then bake it for 30 mins at 160C.

This is the end product.

As you can see. there are a lot of holes.

It’s the air bubbles.

A close up of the cake.

Overall, it’s an easy cake to bake.

The cake tasted quite sweet

and I can’t really taste the coffee.

I think I will need to use black coffee when I bake this again.

It is my fault actually because I used Nescafe.

You’re supposed to use strong coffee.

I think black coffee is a strong coffee?

Both recipes are similar.

I followed the YouTube video recipe because I had not enough butter. 🙂

Wanted to make the icing but Mum told me that she didn’t want it.

I guess she does not trust me with the icing.

So, what did you do for your Mum on Mother’s Day.

Share with me! 🙂

To all Mums out there,

Happy Mother’s Day.

Without you, we can’t function.

You’re part of us!

Thank you for all your hardwork!

Birthday Cake

Before you asked, no I did not bake my own birthday cake! Haha!

Celebrated my birthday3 weeks ago.

It was just a simple celebration.

I’ve always wanted to have a homemade cake.

I just feel that a homemade cake shows the sincerityand the effort someone puts it.

I’ve always wished someone baked a cake for me and I kind of got that wished.

Received a boc of red velvet cake from a friend of mine.

Even though she did not baked it, I really appreciate it.

It’s the first time someone actually took the effort to give me a box of cupcakes.

Thank you Nazurah. ❤

The red velvet cupcakes are really addictive.

Since I received the cupcakes a few hours before my birthday,

at the stroke of 12, I ate it! 😉

I think I ate half of it.

I really want to try to bake red velvet cakes.

Maybe i’ll bake it on Mothers’ Day since my mum like it too.

Hinted to mum that I want a chocolate cake.

And she bought a delicious and chocolaty cake.

Another addictive cake.

My brother ate HALF of it and it’s my birthday cake not his.

So you can tell how delicious this cake is!

I really have no luck on baking a whole cake but I really want to bake a birtdhay cake soon.

Maybe I need to take some time learning it from Youtube and reading books.

Must master it before October so that i’m able to bake for my mum

and this time, I want to make it from scratch not from the mixture box.

Banana Cake

Remember on my previous post I shared a recipe on Banana Cake?

I finally found the video that I referred to while baking the cake for my grandfather.

Thanks to the unique choice of music I finally found it.

Anyway, my grandfather’s birthday was 2 weeks ago.

Last week, I baked a banana cake for him.

Yes, the cake that I baked for him on Father’s Day.

So here are the ingredients to bake a banana cake:

125 gram of unsalted butter

3/4 cup of sugar

1 egg

1 and a half cup of self raising flour

1/4 cup of milk

1 teaspoon of vanilla extract

2 bananas (mashed)

Nuts (if you love nuts)

So, what are the steps to bake the cake?

Here you go:

Easy right?

You need need to mix everything together!

Then pour the batter on the pan.

On the previous attempt, I added nuts only on top of the batter.

This time, I mix it in the batter so that the nuts are everywhere.

Bake it for 30-40 minutes at 170 degrees.

Check it at 30 minutes if it’s still not bake, bake it for extra 5 minutes.

After 35 minutes!

Love the final product!

It was a hit too with my family.

They love it and said it is delicious!

Happy Birthday Grandfather! ❤

Mum’s Birthday Cake

I wanted to bake something for my mum for her birthday.

I want to surprise her.

I’ve always wanted to make her a birthday cake but we do not have a oven at that time

and I do not have the confident.

I keep thinking that baking is so hard and I can’t do it.

Time was a factor.

I can only bake it when she left for work.

And the night before I attended a concert and was really tired.

I am ambitious.

Wanted to do a 3 layer cake.

I had no choice but to cheat.

Bought a cake mix.

I even hid this cake mix in my cupboard.

I didn’t sleep all night.

When I saw my mum left for work, I quickly set up everything.

I followed the steps on the box but I was confused on the amount of water.

I blindly followed the picture and used the same thing.

And it turned out that it was really watery.

Another lesson learnt.

I need to really study the recipe.

Please bear with the ugliness of the icing.

I’m not an expert on it.

For the icing recipe, you can check out the post on vanilla cupcakes.

I decided to sprinkle some heart shapes to make the cake look more “presentable”.

When I have the time, I would love to give it another shot.

Apple Crumble

After baking something related to banana,

I was thinking what other fruits I can bake.

An apple.

As the saying goes, an apple a day keeps the doctor away.

I followed this recipe:

I nearly failed baking this.

I was in a grumpy mood and I did things halfheartedly.

Instead of using the normal flour,

I used self raising flour and on top of that, I added in baking soda.

It was a disaster in the oven.

It’s like there’s a volcano inside the oven.

Everything started to overflow.

My heart sank looking at it.

But eventually, it turned out well.

I’ve always thought the crispy part on top of the of apple crumble are nuts

but after making this, I eventually found out that it’s the flour.

You just need to sprinkle it.

Part of it was burnt 😦

Lesson learnt from this baking session was that if you want to bake,

you need to be in the right mind.

Otherwise, things will turned out bad!

Hope to bake this again and follow the right steps!

Banana Cake with Nuts

My grandfather is a fan of goreng pisang or banana fritters.

I wanted to do something for him last Fathers’ Day and

so I decided to do something related to bananas for him.

So what should i bake?

I discussed it with my mum and eventually decided to make a banana cake.

I couldn’t find the original recipe that I followed while baking

but this is the closest!

This is what happened when you don’t save or write down the recipes

and there are thousands and millions of recipes on Youtube.

I added in walnuts because it’s more crunchy & basically I love nuts!

If you want a richer taste, make it into cupcakes.
