Microwaved Banana Cake

Do you feel left out that you don’t have an oven to bake cakes?

Don’t worry, now you can still ‘bake’ a cake using the microwave. I have always wanted to try microwaved cake and see what the hype is all about.

I took the opportunity when it was my grandpa’s birthday.

1 tablespoon of butter
1 egg
1 tablespoon of milk
1 banana
3 tablespoon of self raising flour
3 tbsp brown sugar

Step 1: Melt the butter.

Step 2: Beat the egg and add in milk.

Step 3: Add in mashed banana to the egg and milk mixture.

Step 4: Add in brown sugar and self raising flour.

Step 5: Pour the mixture in a bowl/cup. For me I pour it in a small bowl and cook in the microwave for 1 minute to 1 minute 15 seconds on medium heat.

This is what it looks like after it has been microwaved.

Verdict: I love it. It taste like steam cake. If you love banana, this recipe is for you! You can serve the cake with an ice cream of your choice.

If I were to make it again, I would add in more orange juice so that it will taste more orange taste to it.

Do follow me on my other blog where I do sometimes post about cakes/cupcakes too!

Happy Chinese New Year! Hope the year of the horse brings you luck and happiness! 🙂

Updates: Hari Raya Cookies

I’m so sorry for the lack of updates. I have not been baking for some time or baked any new recipes.

However, I tried something different this year. I actually sold cookies and meringue that I baked. I don’t know how I got the confidence to actually sell something which I don’t really bake.

Firstly, I think it’s a great opportunity because a lot of people are selling something during Hari Raya.

Secondly, since I’m jobless, I feel that this is an extra income for me. At least I can earn some income even though it was not a lot.

This is my first time baking chocolate chip cookies.

Looking back, I really think I am crazy because usually people sell something that they have confidence in it.

I had to play with the temperature and time. It was really challenge baking cookies. Once you find the right timing and temperature, everything seems easy.

20130905-161705.jpgI did meringue last year.

If you want the recipe, look out for it in my earlier post. However this year, after doing research, I lower the temperature and time and it is better.

After rounds and rounds of baking, I have learnt quite a number of things.

1) You need a lot of patience in baking because you will face a lot of obstacles along the way. Obstacles such as burnt cookies or under-baked cookies. You need to play with the temperature and timing for several times and it might take you one whole day to find the right one.

2) Never give up attitude. I wanted to give up halfway and decided not to take any orders. Thanks to my Mum who has been really supportive and helping me. She was the one who kept telling me it’s okay. Try again. Try baking for hours and then you think it’s not what you wanted, you just feel that all your efforts are wasted.

3) Lastly, you make the recipe, not the recipe make you. This means that you can alter the recipe based on what you feel is right. The recipe is there to guide you. If you think it is too sweet, cut down on the sugar. If you think the cookies need a longer time to bake, then do it. Different oven has different settings and the heat varies. Play around with the temperature and timing. Follow your guts.

Before I end this post, I would like to thank my friends, family members and my mum’s colleague for supporting me and buying the cookies and meringue. I know the cookies and meringue are not perfect and it might not be the best cookies or meringue you have tasted. Your support means a lot to me and I will continue to improve on it.

To my mum, thank you for being there for me and helping me. It was really great way to bond with each other. I still remember we did not sleep the whole night and only finished everything at 9 am.

Banana Cookies

It’s Father’s Day today and I’m celebrating it with my grandfather.

If you’ve been following my blog,

you will know that my grandfather is a fan of banana fritters.

I’ve been making him banana cakes for his birthday and other occasions.

I was really stressed.

I want to do something different and I thought of making banana cookies.

I need a recipe that is quick and easy.

After searching for days, I finally found one.

Thanks to The Burlap Blog for the recipe.

It’s so easy and you only need two ingredients.

Yes, just two ingredients!

It was supposed to be a healthy snack.

The original recipe used oats but I can’t find oats and so I used 3 in 1 Nestum.

If you would like the healthier version, you just need to replace the Nestum with oats.

You will need a cup of oats and 2 bananas.

For me, I used 4 packets of Nestum.

You can also add in raisins, chocolate chips or nuts to the cookies. It’s up to you.

Put the nestum/oats in a bowl.

Then add in two bananas.

Smash the bananas and mixed it with the oats/nestum.

And you’re done.

For the original recipe, it states that you just need to bake it for

15 mins at 175 degrees.

At the 15 min mark, it is still soft to me.

I want it harder and added in another 15 mins.

It was still soft.

It’s up to you on how hard you want the cookies to be.

Eventually, it will be a little bit soft not hard like your normal cookies.

At last, I baked it for 40 mins.

But don’t straight away baked it for 40 mins,

try 20 mins first and play around with it.

After 40 minutes of waiting and being so worried,

it’s finally done!

Let is cool for a while and it’s ready to be served.

Just look at the bananas.

At first, I wanted to add raisins but left it out because the 3 in 1 Nestums

has sugar in it and I don’t want it to be so sweet.

I love two or three ingredients recipes.

It makes life so much easier! 😉

Anyway, I would like to wish all Father’s out there,

a very Happy Father’s Day! ❤

You still have time to surprise your dad by baking him this cookies for breakfast.

The Cupcake Bible

Recently, I was at the library and decided to check out the recipe books.

This book caught my attention.

Other than the word bible, the amount of recipes makes me feel that it’s a book worth reading since I can discover different recipes by just reading this book.

I flipped it yesterday and found quite a number of easy recipes.

Not only that, the book include recipes that you can bake with cake mix.

So no excuse to those who says they can’t bake because with a cake mix,

you just have to follow the instructions and that’s it.

Isn’t that easy?!

I’m really tempted to bake soon and I just need to find myself a supplier for the ingredients.

Supply me the ingredients and i’ll bake for you! 🙂

Another section which I useful is this page where it inform the readers

about using other ingredients if you do not have those listed in the recipe.

This is such an important page for bakers because it can help you save money

and use the ingredients that is available in your kitchen.

For example, if you do not have a buttermilk,

you can just use normal milk and add vinegar or lemon.

This for sure will save you a lot of money.

So do check out this book!

You can get inspirations because this book features a lot of cute decorations and interesting recipes.

I’m thinking of trying out one of the recipes next week.

In other news, I’m looking for an affordable baking class in Singapore.

So if you have any recommendations, please inform me.

Thank you in advance. 🙂
